Grünkohl for dinner – week 4

This week my little project is a recipe hack of the traditional German Grünkohl  or Kale and Sausage dinner. It is a very traditional dish for Ostfriesland but based on the amount of variations I see on the recipe online I think it has migrated along with the people.

The kale is harvested after the first frost which preserves the bright green color when it is frozen. The bright green inevitably turns to a dull green after hours of cooking but the flavor makes up for looks in the incredibly unattractive dish.  Scroll to the bottom if you want to see what it looks like cooked but please don’t let this deter you. Kale is full of lovely antioxidants even if it is smothered in onions.

I have finally gotten my hands on a slow cooker (I love amazon.de) and have been looking for recipes to test its worthiness. This recipe was perfect for my new kitchen appliance, it needed the afternoon for the flavors to meld and the aroma to fill the house. Hubby is not a fan of Grünkohl  but I love it and because the Grünkohl served in restaurants is normally too salty for my taste, this is the perfect recipe to make at home.

What you need:

8 cups of chopped kale
2 cups or chopped onions
1/2 cup of rehydrated spelt
1 tsp nutmeg
lots of fresh pepper
6 tbsp mustard – I used jalapeno mustard
750 ml bouillon
Course ground spicy pork sausages – I used Pinkel
smoked bacon chunks- optional

What you need to do:

In a skillet fry up the bacon until just perfect, remove and soften onions in the bacon grease. Mix in spices, mustard and bouillon and bring to a boil. Stir bacon into the mix, if you wish or save it for something else. It’s really up to you.

Mix kale, spelt and hot onion mix in the slow cooker and place the sausages on top. Turn the heat to medium and cook for 6 – 8 hours or until it smells good.

For the most traditional version of this tasty winter meal, serve with boiled potatoes and smoked ham slices and another sausage type.

Trip of the month – Osnabrück

This month’s trip was just a little day trip to Osnabrück, just a little over two hours on a flat, straight and wide highway and we were there. The old town was charming and the city center is easily traveled on foot. Just a warning, the only place you can get decent wi-fi coverage is at the Starbucks. So grab a map at the tourist office located next to the cutest hotel I have ever seen, Wallhalla Romantik hotel.

Shops in the old city close around 2 pm on Saturdays, so start there first the other shops are opens much later.

Of the memoirs I have read recently this was, thankfully, the shortest. Mindy Kaling is a nerdy version of Kelly Kapoor, if you don’t like Kelly you probably won’t like this book. You also may not like this book if you really like The Office and even enjoy the Kelly Kapoor character.

Maybe I was hoping it would be really funny and thought provoking like Bossypants from Tina Fey or maybe it would be a shorter version of the dry witted, tattle-taley The Fry Chronicles by Stephan Fry. No, on both counts, it just seemed like a self indulgent memoir of someone who has not lived yet.

I wouldn’t want to give the impression that I don’t think that Mindy Kaling is talented. She had some observations about her parents’ marriage that I enjoyed. Although her own fantasies about killing her fantasy husband on her own wedding night were disturbing and should be a cautionary note to anyone considering dating Mindy.

Cranberry walnut scones – week 2

I looked at a lot of recipes for these scones. We had some wonderful berry scones at the French Meadow Bakery in Minneapolis and I was looking to recreate something like this. Believe me, there are a lot of scone recipes out there and they are so different. I had trouble finding the commonality in them. So, lazy cook that I am, I picked the one with the least ingredients and I trusted that the English knew what they were doing in the scone department. After baking them I not sure that they do…

Recipe is basic scone recipe courtesy of the BBC. I added one cup of re-hydrated cranberries and chopped walnut and omitted the brushed egg on the top. They were quick and easy but I am not sure I would make them again too. I think I might try one of the more complicated recipes just to kill time.
